Increase the Throttle PID Attenuation to somewhere closer to 0.50 or 0.70 if need be.
This will reduce PID gains as the throttle rises, keeping the jitters away.

I think you need to use a FTDI adapter, connect to the GPS using the u-center software and change the baud rate to 115k if not done-so already.

He might need to adjust some stuff in config.h to get it to initialize properly. Depends on what his transmitter is set at, and what the throttle range looked like when they were calibrated.

Also I suppose in my original suggestion, 0.01 would be too fine of an incriment. Maybe 0.1 would be better.

put the controller in Acro mode, and keep he throttle low, just above idle. Then use the right stick and push it into a corner, and it should cut 3 of the 4 motors. Moving the stick into another corner should activate one other motor.

if the guI is only showing 4 motor outputs, then I dont think you have the octo set properly in the sketch. Try setting it to Hex and see if more motors show up. It should look like this in the GUI:

Arduino is the programming code that multiwii is written in. You only need to worry about arduino if you have to edit config.h to change hardware parameters.

One problem is latency. Any latency in the video will make FPV flying difficult. This is the reason we all use Analog video. Analog video works, and it works great. I don't see any reason to go all digital, unless you want to FPV in HighDef, good luck finding enough bandwidth to pull that off. Also...
