Hi,
i will try to build a Quadro multiwii but i´m still confused about the Barometer.
Is the Barometer activated the whole time or can i deactivate it through the lcd or via a command like for activate the lcd config?
can i limit the elevation through the lcd (for example: limit max. height to 20 meters and the min. height to 1 meter)?

The barometer is for altitude hold.
You activate it by a switch on your radio when you fly at desired altitude.
The software tries to maintain this altitude during this action.

how does it control the altitude by software ? does it take readings then control throttle?

Let me explain:
The Barometer measures pressure and temperature. From these data you can compute the altitude in the atmosphere.
If you activate the "Hold Altitude Function" the software is checking the altitude a lot of times per second. If there is a change e.g. increasing height, the motor power is regulated down to decrease altitude. In the end the Quadro has a fixed altitude.
