Which mode to maiden on?

Which settings/mode would be most suitable for a maiden flight?
Level only? Would that attempt to keep the quad level on take off and hover?

1. Do first tests with copter in your hand over your head; tune parameters if it feels wobbly
2. Maiden flight - I reduce level I by half and use that for takeoff
3. switch to acro during flight
4. tune params acccording to how it feels
5. repeat

Can the PID values be changed while the quad is powered up? Or does it need a power down/power up in order for the new PID values to be 'live'?

As soon as you click the "write" button on the GUI, those settings are now live & active.

Can the settings be updated while in the air? Or does the board reset quickly?
Just wondering, as my wife makes my changes when I land... but ... can I ask her to modify a value while in a hover?
