I feel i am asking a stupid question but i want to make sure i understand fully before i destroy $200 worth of motors.
my motors are rated at 6.75A, 12oz thrust. my ESC is a HK SS 8-10A
is it going to cause a problem that my ESC can push out 8-10 Amp yet my motor is rated at 6.75?

ESC dont push out amps, they provide as needed.
The motor draws amps and you must make sure that you match you motor with an appropriate esc so that the amount of amps the motor wants to draw is equal to or less then the total of which the esc is able to provide.
As in your situation you have a total pool of 10amps per esc which you can draw from if needed but your motors will only draw 6.75 when they are fully loaded up.
