What FC board are you using?
Which Firmware did you install?
No one can guess of what the Angle mode issue is without this info.
If the copter is NOT IN THE AIR then the motor speeds will NOT be steady.

They have worked very well for lots of people (check the Warp Quad thread in RCGroups forum).

Go read the MultiWii Wiki to learn how to properly setup and trim (look up the ACC TRIM stick command).
You will also need to tune the PIDs, Rates and Expo.

Did you Cal the ESCs???
Are the ESCs connected on the correct FC pins?
Ground to ground, signal to signal?
Are the motors correctly wired to the ESCs?
Everything else looks ok and since the LED comes on when Armed and the Gui show motor values this is not in the MW code.

Some thing is terribly wrong. Back up and re-do the basic TX setup using the MWconf.exe GUI to check the stick values. Do remove the props for this. Real sorry you bought those junk ESCs and the motors are pobably not much better.
Many people have built tri-copter and they fly well.
Send them back to the seller and buy well know ESCs and motors.

Ok, thanks for reporting back your results.
It does sound like it is the FC board. Could be the XTAL drifts badly with temperature or there could be a bad solder joint that acts up when cold.
I have not had problems with any of the FCs I run in the cold.

I did not see that ESC in the pdf from BLHeli. So don't know which one it is yet. You may not need to re-FLASH but only change the settings (Timing,V Cut-off, etc). That is working exactly as it should when in ACRO flight mode.
This is also called Rate mode and Does Not self-level. this is the only mode I and many others fly in since it gives the most direct control.

is probably the wrong board.
Read the docs for the board you have to select the correct board type in the config.h file.
Also, double check the RX to FC connection for the Pitch RC channel. It could be just a bad cable or the cabled connected backwards.
