The i2C error count isn't lying to you, there is definitely an issue somewhere.

What will you be using to display this data?

What you're wanting to do is already possible using the MSP (Multiwii Serial Protoocol). Take a look at open log and telemetry systems (Bluetooth or 3DR radio).

You need to trim the accelerometer!

Start with the GUI and watching the motor sliders, get it pretty close (PROPS OFF) then take it outside and do it again IRL. pretty much the same process as using the trimmer buttons but you're applying the trim to the FC, not the TX.
